A Sydney woman who killed her mother in a violent attack with over 100 stab wounds confesses to attacking and hurting two prison officers while in jail.

Jessica Camilleri was sentenced to 21 years for her mother's 2019 murder in western Sydney.

The 29-year-old was convicted guilty of manslaughter for stabbing her mother at least 100 times, carving her face, and decapitating her.

She attacked and wounded two correctional staff while serving over two decades at Silverwater Prison.

After pleading guilty, Ms Camilleri appeared in Burwood Local Court via videolink on Wednesday.

NCA NewsWire exclusively reported that she assaulted a female corrective services officer in August and another in October.

In August, the inmate ran toward the closing door and slid through, according to police reports.

When a prison officer turned to speak to another inmate, she began to return to her cell.

According to authorities, Ms Camilleri grabbed her hair and plucked a fistful 'from her scalp'. Three officers restrained her.

After being ripped from her roots, the victim had a lengthy bald patch on her head.

Ms Camilleri said she pulled the officer's hair but felt it was "only a few strands" when quizzed about the painful incident.

Two days after the assault, she told police, 'I just wanted to give (her) a little bit of the taste of (her) own medicine for the s*** they've been doing to me... since I've been here.

Two months later, the 29-year-old assaulted another jail guard.

She grabbed a fistful of another officer's hair and pulled while being partially held by one cop.

Ms Camilleri held on until a third officer restrained her. The victim screamed in pain.

The incident left the prison guard with two hairless patches. Ms Camilleri's grasp caused right shoulder and neck edema and bruises.

Two weeks after the assault, the inmate said "that's pretty much what occurred" when officers described the incidents.

Both offenses carry a maximum seven-year sentence.

Burwood court heard Ms Camilleri will be committed for District Court sentencing next year on Wednesday. February 3 is her court date.

Justice Helen Wilson called the 29-year-old a "seriously impaired offender" during her mother's terrible death trial.

'The offender's limitations are such as to evoke pity; her behaviour is such as to attract the harshest censure, and punishment,' the NSW Supreme Court judge said.

Justice Wilson called the grisly murder "exceptional viciousness and cruelty." The court heard Ms Camilleri hacked off her mother's nose tip, tongue, and eyeballs.

The court was informed she killed the older woman with seven knives, four of which snapped during the furious stabbing.
